Ruby chocolate is the fourth cacao introduced by Barry Callebaut, a Belgium-Swiss cocoa Company.
Ruby cacao has been in development since 2004. In 2015, this variety was patented by Dumarche et al. the inventors. Callebaut is the distributor.
Ruby Cacao is processed in Switzerland. Evaporated milk, sugar, and additional cacao butter are added to Ruby cacao at processing time. No color or flavor added.
